Smashed strawberry meringue

A really easy summer pudding that used to be known as Eton Mess. For obvious reasons I think this is a better name for it. This should stretch to 6 but I wouldn’t bank on it so double the recipe if you want plenty to go round.

Serves 4-6
Vegetarian
About 15 minutes
About £1 - £1.25 a head

1 large (about 450g) pack of strawberries
1 tbsp caster sugar + 2 tsp for the cream
1 pack of meringue nests (Marks and Sparks does really good ones that taste just like homemade meringues)
284 ml carton double cream
150 ml carton whipping cream

Pull the stalks off the strawberries and slice them thinly. Save a few slices then sprinkle 1 tbsp of the sugar over the rest and set aside. Break up the meringues into chunky pieces. Mix the two creams together with the remaining sugar and beat with an electric or handheld whisk until it just about holds its shape. (If you pull the whisk upwards through the cream it should form a floppy peak). Layer up the strawberries, meringue and cream in a bowl (ideally a glass one) finishing with a layer of cream. Chill in the fridge till you’re ready to eat it then decorate with the  remaining strawberries

* Don’t overbeat cream or it becomes solid and heavy and develops a slightly unpleasant buttery flavour.
