Apple and raisin muesli

Fresher's week doesn't leave you much time to get into the kitchen but this healthy muesli will get the day off to a good start. You don’t need a fancy muesli - one that contains a high proportion of porridge oats works best
Serves 1
Vegetarian
Vegan if you use soy yoghurt
Time: Under 15 minutes
Cost: About £1
3 tbsp muesli
About 75ml (5 tbsp) pressed apple juice* preferably cloudy apple juice
A few raisins
1/2 a crisp apple (e.g. Blenheim or Granny Smith), core removed
Plain or soy yoghurt to serve
Spoon the muesli into a cereal bowl. Pour over the apple juice, stir in the raisins and leave for 5 minutes. Grate the apple into the bowl, stir then add a little more apple juice if you think it needs it. Serve with a dollop of yoghurt.
TOP TIPS
* If you haven’t got a grater you can obviously just chop the apple up small but the texture of the grated apple is really nice
* If you want a fruit juice that actually has some health benefits go for a pressed juice rather than one that is made from concentrate. The flavour will be better too.
