Life for us Brits is scarcely bearable without gravy but how to make it without a roast. Not with granules, please. There's a much better way of doing it. Which involves - believe it or not - Marmite. And it's veggie.
To make enough for 2 people measure out 225ml (about a mugful) of boiling water and dissolve a level teaspoon of Marmite in it. Melt 1 tbsp (15g) of soft butter gently in a saucepan and stir in 1 level tbsp of flour. Cook over a low heat for a minute then add the Marmite stock, stirring continously. Bring back to the boil and simmer till ready to use. No extra salt or pepper. That's it!
If you want to make onion gravy, peel and finely slice a medium sized onion and fry it over a low heat for about 6-7 minutes in 2 tbsp oil until the onion is soft. Stir in 1 tbsp of flour then add the Marmite stock as described above.
